Question about Shipping with UPS?

I payed for the 2 day shipping (I'm in no rush, I just want to learn how this works) I ordered it late Friday evening, so I know I have to wait for the next business day. It says Sunday- order processed, ready for UPS. Today I got one that says origin scanned. So does that mean that it hasn't shipped yet and the 2 day shipping will come out to it being Wednesday? Or Does the whole process start on Monday? My est time is Wednesday, but I did hear they'll just say an extra day so you can't sue them for being late or something.
