What's with the 2 week notice?

When a person decides to quit their job. Companies don't have to give you notice and you can fired or let go at any time. Most employment is at-will. Either way in asking, just wondering if it's different standard based on the type of work. 2 weeks is appropriate for a management -supervisor job. somebody working as a cashier, on the floor stocking items these jobs are easily filled. plus any wise hr person would have backup personnel in case of medical emergencies etc. would an employer really hold it against you if you quit without notice when they know training another person would take a few weeks or less than that. then it would make them look bad if they start talking crap about you!
